One of Barcelona’s most traditional dishes is patatas bravas, as evidenced by the results of the Time Out Index survey that asked some 35,000 people in 2020 what they were passionate about in their city. In terms of dishes and gastronomy, the iconic winning dish was bravas. The novelty is that now in Barcelona you can eat patatas bravas in waffle form.

You may wonder where you will be able to taste this novelty. Well, the bravas in waffle form (Waffle type grill), are offered in the city by the restaurant Aire. Just as tasty and traditional, only with a different presentation.

In Aire this tasty dish is prepared with a potato base cooked with olive oil, seasoned with pepper and salt. From there comes a perfectly integrated dough that through a waffle iron takes the shape of a waffle, with its characteristic texture: mellow, soft and creamy on the inside and crunchy on the outside. As for the waffle holes, they are filled with aioli and salsa brava.

Patatas bravas in waffle form

In Aire restaurant the dough with the described ingredients is prepared with great care in the right quantities to achieve the perfect cooking point. The secret is to ensure that the bravas are not too dry but juicy and crispy.

As for the sauces, the waffle shape allows them to be filled like a chessboard, but in this case with white and red “sauce pieces”. Some holes in the Waffle are filled with alioli (garlic mayonnaise), a white sauce made from sunflower oil, garlic and pepper aroma.

The other holes are filled with rojo bravo, a sauce made by mixing a tomato reduction with sriracha or fermented chili (hot sauce from Asia), with a touch of Perrins (Worcestershire sauce).

These bravas, which are perfectly integrated with the sauces, can be enjoyed at Aire Restaurant, in an elegant and spacious atmosphere on a terrace harmoniously integrated with the surrounding historic environment.

Bravas: a pride of Mediterranean cuisine

The story goes that this dish appeared around the 1960s in a bar in the streets of Madrid. Since that time, the recipe has been preserved: fried or boiled cut potatoes accompanied by a spicy sauce, from which it derives its name “brava”.

Over the years and especially after the civil war, this appetizer spread throughout Spain. It is consumed with wine or soft drinks.
