Chicken chili

Chef Ramos is very faithful to the popular recipe, as some restaurants prepare it in a refined way. Uncomplicated and very street style, it is a garlic and onion sofrito with mashed aji mirasol (dried yellow chili bell pepper), aji amarillo and aji panka (a little spicy). Separately, prepare the chicken broth to which leek, celery, onion, garlic and black pepper are added. Meanwhile, to the sofrito add bread without crust blended with evaporated milk until it is well integrated. This liquefied mixture is added to the chicken broth, stirring for half an hour. Then add the shredded chicken, Parmesan cheese and chopped pecans. Garnish with hard boiled chicken egg, Peruvian botija olives and pecan nuts.

Tiger Milk

It is undoubtedly one of the best known dishes prepared with fresh product that arrives every Tuesday from Peru. Among its ingredients is the type of chili you choose to add to the dish. There is the aji limo (very typical of tiger milk), aji amarillo (spicy and creamy) and aji rocoto (really spicy). Leche de Tigre is prepared by liquefying fish, cilantro, garlic, ginger, celery and onion, mixing it with a “fumet” or fish broth that is liquefied with lime juice and the chili bell pepper of the diner’s choice. Octopus, mussels and other varieties of fish are added to this liqueur and it is served with onion, corn and boiled corn.

Ceviche

It is the typical “street food” dish that you can find in any corner in Peru. It is fresh fish or seafood with lime juice, aji limo, chopped cilantro, the basic leche de tigre preparation and julienned onions. It is served with a lettuce leaf, cancha corn and cooked corn and sweet potato.
